1lb boneless chicken breasts or thighs for juicier meat
1tbsp olive oil
1tsp smoked paprika
1tsp cumin
1tsp garlic powder
1tsp salt
1/2tsp black pepper
1/2cup chicken broth
8small corn tortillas or flour, if preferred
1cup shredded lettuce
1cup diced tomatoes
1avocado sliced
1/2cup sour cream or Greek yogurt
1lime cut into wedges

Directions

Prepare the Chicken
In a medium bowl, combine olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper.
Mix until well combined, then add chicken breasts or thighs to coat evenly.

Place the seasoned chicken in a slow cooker and pour in the chicken broth.
Cover and cook on low for 6 hours or high for 3 hours, until the chicken is fork-tender.
