- 1 poundboneless chicken breasts, or thighs for juicier meat
- 1 tablespoonolive oil
- 1 teaspoonsmoked paprika
- 1 teaspooncumin
- 1 teaspoongarlic powder
- 1 teaspoonsalt
- 1/2 teaspoonsblack pepper
- 8 tablespoonschicken broth
- 8 wholecorn tortillas, or flour, if preferred
- 1 cupshredded lettuce
- 1 cupdiced tomatoes
- 1avocado sliced
- 8 tablespoonssour cream, or Greek yogurt
- 1lime cut into wedges
Directions

Prepare the ChickenIn a medium bowl, combine olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper. Mix until well combined, then add chicken breasts or thighs to coat evenly.

Cook the ChickenPlace the seasoned chicken in a slow cooker and pour in the chicken broth. Cover and cook on low for 6 hours or high for 3 hours, until the chicken is fork-tender.
