Shrimp Ceviche
Bright and refreshing, this shrimp ceviche features tender shrimp and zesty lime, balanced by crisp cucumbers and tangy red onions.

Ingredients
- 1 pound raw shrimp, peeled and deveined, use high-quality, fresh shrimp
- 1/2 cups fresh lime juice, about 4 limes
- 1/2 cups red onion, finely chopped, for sharpness and color
- 1 whole cucumber, diced, adds crunch
- 1/4 cups cilantro, chopped, for freshness
- 1 jalapeño seeded and minced, adjust for heat preference
- 1/2 teaspoons salt, to taste
- 1/4 teaspoons black pepper
- 1 avocado diced, for creaminess on top
Directions
Start by chopping the shrimp into bite-sized pieces and place them in a mixing bowl.
Pour the fresh lime juice over the chopped shrimp to ensure they're fully submerged. Let the shrimp marinate for 30-45 minutes until they turn pink and opaque.
Once the shrimp are ready, mix in the finely chopped red onion and diced cucumber.
Add the chopped cilantro, minced jalapeño, salt, and black pepper to the bowl. Gently toss everything to combine the flavors.
Before serving, carefully fold in the diced avocado for creaminess. Serve chilled with tortilla chips or alone in small bowls.
