Thai Mango Sticky Rice

This Thai Mango Sticky Rice is a harmonious blend of sweet, juicy mango and creamy coconut-infused sticky rice. Topped with a drizzle of coconut sauce, it offers a delightful contrast of textures and flavors.

Ingredients

  • 1 cup glutinous rice, rinsed and soaked for at least 4 hours
  • 1 1/2 cups
  • 2 tablespoons sugar, adjust for sweetness preference
  • 1/4 teaspoons salt
  • 1 can coconut milk, approximately 14 oz.
  • 2 whole ripe mangos, peeled and sliced
  • sesame seeds, for garnish, optional
  • mint leaves, for garnish, optional

Directions

  1. In a medium bowl, combine the rinsed glutinous rice with water and soak for at least 4 hours or overnight.

  2. Drain the soaked rice, then place it in a steamer lined with cheesecloth or a steaming basket for 20 minutes until tender.

  3. In a saucepan, combine coconut milk, sugar, and salt over low heat, stirring until dissolved and slightly thickened, about 5-7 minutes.

  4. In a separate bowl, mix half of the coconut sauce with the hot sticky rice and let it sit for about 15 minutes to absorb the flavors.

  5. Plate a generous portion of the sticky rice, top with sliced mango, and drizzle with the remaining coconut sauce.

  6. Optionally, garnish with sesame seeds and mint leaves for added flavor and presentation.
